Bring 64 fl oz of water to a boil while covered, turn off the heat, and add the Lemon Balm, Spearmint, and Chamomile to the hot water in a large muslin bag. Stir until the herbs begin to release color into the water, cover, and allow it to steep for up to 10 minutes.
Press out the muslin bag as much as possible and discard the herbs.
Add the juice of 6-8 lemons, ½ Cup of honey or another sweetener of choice to taste, and stir until evenly combined.
Divide 1 cup of the lemonade preparation and set aside.
Pour the remaining lemonade preparation into a pitcher or mason jar and set aside to cool in the fridge.
Add ¼ cup of prepared Blue Skies Simple Syrup and ¾ cup of spring water to the reserved 1 cup of lemonade. Stir the combination until evenly combined. Pour the mixture into ice trays and place the molds in the freezer to set.
Once the ice has frozen, add your ice cubes to a glass. Next, fill the glass a little under half way with sparkling spring water, and then add the lemonade concentrate to just under ½ inch below the rim. Lastly, drizzle a little extra Blue Skies Simple Syrup on top, sprinkle with lavender buds as garnish if desired, and enjoy!
