“Feelin’ Good” Raw Fudge

“Feelin’ Good” Raw Fudge

Even if you are trying to avoid sugar, that does not always mean you have to skip out on the sweet delights in life.  Let's make some guilt-free, “Feelin’ Good” Raw Fudge together.


You will need:

  • 1 ½ Cup Pitted Dates, soaked
  • ⅔ Cup Coconut Butter
  • ¼ Cup Raw Cashews
  • 4 Tbsp Organic Cacao Powder
  • 2 Tbsp Rose Petals
  • 1 Tbsp Maca Root
  • 1 tsp Cinnamon Powder
  • 1 tsp Vanilla Extract
  • ⅛ - ¼ tsp Unprocessed Salt


Instructions:

  1. Soak 1 Cup of Pitted Dates in spring or filtered water for 2-4 hours.

  2. When the dates are closer to ready, add the ¼ Cup of Raw Cashews to a food processor and grind until powdery.  Empty the powder into another temporary container and set aside.

  3.  Drain and discard the excess water from the dates, add them to the food processor, and blend them into a paste.

  4. Next, add the Cashew Powder back to the food processor along with the ⅔ Cup Coconut Butter, 4 Tbsp Cacao Powder, 2 Tbsp Rose Petals, 1 Tbsp Maca Root, 1 tsp Cinnamon Powder, 1 tsp Vanilla Extract, and ⅛ -¼ Unprocessed Salt

  5. Blend until smooth and evenly combined.  There is a chance that the coconut butter may get hot and separate during blending.  If this occurs, simply blend until everything is smooth.  Empty everything into a small dish, cover, and place in the fridge until the separated coconut oil solidifies.  The mixture can then be worked with the hands like dough until the oil is evenly combined into the fudge.  It may need to be placed back in the fridge for one more hour.

  6. Once this decadent, no-bake delight has set, it can be cut into bite sized pieces and adorably packaged to give to that special someone.


Note: You could easily customize this recipe by working dried fruits or nuts into the fudge or rolling some of it in coconut shavings.  You could also add a sprinkle of rose petals, sea salt, or even smear a little hazelnut spread on top.  Yum!
