Grate half of the Fresh Ginger into the bottom of a tall glass.
Take 1 slice of fresh lime and squeeze it into the glass, twist the rind a few times to release the volatile oils from the peel, and drop into the bottom of the glass.
Muddle and then fill the glass most of the way with ice.
Add the soda or tonic water, the 2 oz of Coconut Water, and 1 Tbsp of Thieves Vinegar to the glass.
Lastly, Grate the remainder of the Fresh Ginger over the top, squeeze another lime into the mixture.
Stir, and add a lime slice to the rim as a garnish.
